The Lady “met” Tom’s son, Ross, on Twitter and he sent Pimento Cheese for us to taste. The Lady first prepared Hasselback Potatoes and topped them with Tom’s Original Pimento Cheese. You can read my post about this pairing here.
Today she served the remainder of the original flavor and the Chipotle flavor naked on Beecher’s Flagship Crackers.
This is serious Pimento Cheese… seriously serious Pimento Cheese. The Lady and I are always interested in Pimento Cheese and thought the recipe that Miss Anne finally passed on to The lady was as good as it gets…
And while, we still love Miss Anne’s recipe… and always will… Tom’s Tiny Kitchen Pimento Cheese made in Memphis, Tennessee, is one heck of a PC.
Tom has made his PC for years for family and friends who pestered him to take his spread to market. A few of his fans decided to invest and now Tom’s Tiny Kitchen Pimento Cheese is finding homes in grocery stores and specialty markets in Memphis.
His recipe is simple with simple ingredients: Sharp Cheddar Cheese, mayo, pimentos, onion and spices. The chipotle variety has smoked jalapenos added.
The cheese is shredded and mixed with the other ingredients and left with a chunky texture rather than being blended smooth.
The mayo doesn’t overpower the cheese and there is plenty of pimento and green onion.
The finished product is amazing; a world-class pimento cheese… better than any PC that The Lady and I have ever found in grocery stores anywhere in the United States.
If you live in Memphis and haven’t tried Tom’s PC, then shame on you… you are missing out on a major treat. And if you like it hot… then Tom has a PC for you as well…
