Bill Stephenson: Director of Cheese Training, DPI Bio
I came to cheese from another of our fermented friends, beer. I began working as a brewer in 1995 and eventually became so interested in the underlying science that I went back to school to receive my graduate degree in food science with Dr. Charlie Bamforth at U.C. Davis. Thereafter, I spent a few more years working in breweries when an opportunity to work as a cheese maker presented itself. The two disciplines are very closely related so I was intrigued and after attending the short course in cheese making at W.S.U., I was hooked! Unfortunately, that creamery job never came to fruition, but at about the same time I was hired by DPI Specialty Foods in Oregon and have served them in several different “cheese geek” capacities for the last 9 years now.
I am the Director of Cheese Training for DPI Specialty Foods. In a typical day I’m preaching about cheeses to someone. Most of the work of teaching is preparation, so that takes up a good amount of an average day. If not teaching or preparing to teach I am either helping out on questions about cheese with our QC department or troubleshooting a question related to the cheeses that we import. In the last year I spent a large amount of time helping to launch the new, Oregon-based Face Rock Creamery in the market. In the year ahead I’ll look forward to continuing to support Face Rock while we begin working with the Twin Sisters Creamery that will be opening soon.
