Today, we are featuring Lincoln Broadbooks, ACS CCP Cheesemonger from Kansas where he is Manager of one of The Better Cheddar shops in the Kansas City area.
After graduating from college Lincoln backpacked through Europe for a couple months. He tasted quite a few great cheeses and this peeked his interest.
While working on his masters he picked up a hobby of home cheese making and got a part time-job selling cheese at The Better Cheddar—the destination for cheese and gourmet food in Kansas City for thirty years. He later got the opportunity to manage the shop. Lincoln loves getting the chance to sell quality cheese and educate his staff and customers about cheese every day.
Last year he became the only person in the six state area, (Kansas, Missouri, Oklahoma, Nebraska, South Dakota and North Dakota) to become an ACS Certified Cheese Professional.
Here are Lincoln’s answers to our questions: Your favorite Cheese Pairing: I really like Abbaye de Belloc or other good cheeses from the Ossau-Iraty family, with Confiture de Cerises noires (black cherry jam). Classic for a reason – it’s really good!
Your favorite Cheese Plate: I would do Green Dirt Farms Fresh Sheep with Nettle, Brie de Meaux, 3 to 4 month old Casa Madaio Caprotto, Jason Wiebe Dairy Cottonwood River Cheddar, Alpage Gruyere aged 1 year. Along side I would have Uncle Phil’s Jalapeno Relish, Fried Marcona Almonds and Sallie’s Greatest Fig Onion Rosemary Jam.
Your favorite Grilled Cheese: I have two. 1) Good old Port Salut and Shelburne Farms two year Cheddar on a whole grain bread. 2) P’tit Basque, thinly sliced Spanish chorizo and caramelized onions on crusty bread.
A non-Cheesy fact about yourself: I have a MA in Theological Studies.
If you could have dinner with any famous person, alive or historic, who would it be and why? Phineas F. Bresee. I would want to know what he thought about the lasting effects of the Progressive Era and if he viewed them as positive or negative for the church and society today (Sorry for the obscure and boring answer, I kind of geeked out!).
