Nothing is better than cheese except half-price cheese… and occasionally The Lady hits the cheese jackpot and comes across cheese marked down half price. Yesterday was one of those days and today it was “half-price” pimento cheese spread…
Here’s what she did…
Ingredients:
2 Dollops of Mayo – about 4 ounces
1 Large Jar of Diced Pimento with juice in jar (4 ounces)
1 pound Extra Sharp Cheddar (The Lady used Tillamook)
1/2 pound Medium Proosdij
Preparations:
In a food processor, combine the mayo and pimento. Process until well blended. Using the shredding blade, add both cheeses and blend until only a little chunky.
Serve on your favorite bread or crackers.
The sharpness of the cheddar was a perfect pairing with the creamy Proosdij. Proosdij is a Gouda-style cheese from Holland that is made with less than 48% butterfat, a requirement to be sold as a “true” Gouda. It also uses slightly different starters.
