Shari's Elegant, Yet Simple Blue Cheese SpreadWhile in Seattle this past week visiting cheese shops (twelve shops in seven days; a whirlwind cheese tour), I met many amazing and passionate Cheesemongers. At the Fred Meyer store in Kirkland, Washington, I met Shari, who in addition to mongering, loves to cook and develop recipes.

One of her favorites is a blue cheese spread that she shared with me. Here’s her recipe:Ingredients: 

16 oz. Philly Cream Cheese (softened)
4 oz. blue cheese (the stronger, the better!) Smoked blue cheese is also great with this!
4 diced green onions, tops included
1 1/2 teaspoon red pepper flakes

Preparation:

Mix well, serve… as it sits in the fridge, it becomes more intense.

For the spread she shared with me, Shari used Rogue Creamery’s Crater Lake Blue. It was luscious; the cream cheese making it spreadable and the Crater Lake Blue making it robust. I took some back to the hotel for The Man to try who declared it “Swoonable”, which he did…
