On a recent trip to Colorado, I came across a cheese spread made by Blue Moose of Boulder… what caught my eye was that it was made using MontAmore, a cheese that I love made by Sartori. I remembered that a member of the Sartori family lived in Colorado, so I was not surprised. However, I did verify the cheese being used was the same Sartori MontAmore and was delighted to learn it was. I purchased a container and brought it back home for The Man and me to try.
As many of you know, among my “culinary quests” is a never-ending search for a perfect pimento cheese… and while not perfect (that would end my journey and I can’t allow that to happen), this Blue Moose Spread is pretty damn good… so good that I regret it isn’t sold here in the Pacific Northwest… no idea when I might get back to Colorado…
MontAmore is a perfect choice for making a pimento/pepper cheese spread. It’s sweet, nutty and creamy; just the right base for a cheese spread. While classic pimento cheese is made with pimento peppers, substituting roasted sweet peppers is acceptable and to most… close enough to not notice the difference. I confess that on occasion I have substituted roasted red peppers and called the finished product “Pimento Cheese”… The Man never knew the difference… my maternal grandmother… God rest her soul… well, that might be a different story…
I did not read the ingredients list on the container so I can’t report if it was a cream cheese, yogurt or mayo base but whichever, it is a tasty spread. The blend of roasted red peppers and the cheese is delicious on crackers, in a grilled cheese sandwich or heated. I would also recommend using it in a mac n cheese.
The same day The Man and I tasted Blue Moose, we also tasted a PNW local pimento cheese and found it could not stand up to the Blue Moose… I would love to find a local PC for those evening’s when I’m craving pimento cheese but too lazy to take the time to make it…
Blue Moose, is there any chance you might make your way further west???
