It’s Blue Sunday! The best kind of Blue though. I’m here in beautiful Central Point Oregon eating some fantastic blues during the Oregon Cheese Guild Festival and I encourage you to make the trek next year!Today I have chosen the King of English Blues! I’ll be posting some links (working from a phone). Here’s some tasty tidbits about Stilton-
~ Only produced in the counties of Derbyshire, Nottinghamshire, Leicestershire.
~ Milk must be pasteurized
~Cylindrical Shape with a Natural Rind
~ Never be pressed (need nooks and crannies to allow for the “magical blue veins” that radiate from the center of the cheese).

Fun fact: Stilton cheese cannot be sold in the town of Stilton, for which it is named, because the town is not located in the PDO-mandated area. The Town of Stilton has applied to the EU for an exception to allow the cheese be made in their town legally.
