When a Cheddar wins World’s Best Cheddar at the World Cheese Awards (in London, no less) three times… well… it must be a great Cheddar.
Fiscalini Bandaged Cheddar is made in California in the heart of the San Joaquin Valley, the home of “happy cows”. Mariano Gonzalez, the head cheesemaker at Fiscalini, cut his teeth in Vermont at Shelburne Farms where he made his first cheddar. In 2001, he joined the Fiscalini Family and with John and Heather has made their bandaged cheddar into a world class cheese.

Made with Raw Milk from the 3000 Holstein cows on the Fiscalini Farm
Animal Rennet
Aged at least 16 months; turned daily during its first two months
Cloth-wrapped and rubbed with lard
Truckle weighs about 56 pounds
Earthy, nutty and slightly sweet, this cheddar is reminiscent of the traditional English Cheddars that inspired Mariano to create his own award-winning cheddar.
