Washed Rind Friday Presented by ACS CCP® Erin Clancy
First, I am SO sorry that I didn’t post yesterday! The days got away from me and I didn’t even realize it was Thursday. So, washed rind Friday.
We are looking at Willoughby today. It is an original creation of Marisa Mauro’s Ploughgate Creamery, a Cellars collaborator that ceased production of the cheese after a creamery fire in 2011. With Marisa’s blessing, JH resurrect this washed-rind and have continued to develop the recipe at Jasper Hill Creamery. Some basics: Pasteurized cow’s milk, washed rind, aged 6-12 weeks, and comes in an 8-ounce wheel format.
JH has been doing a really cool collaboration series with Willoughby and different breweries throughout the US. Some breweries included in this side project are The Alchemist (Petit Mutant), Lost Nation Brewery (Gose), Transmitter Brewing (H1 Zinfandel Saison), Almanac Brewing, and Throwback Brewing to name a few. I think it’s a cool project that not only creates a decadent, unique product every time but it brings together that neighborly love we all like to see in our industry and across similar industries. Remember cheese <3 ‘s beer! Best friends.
Some pairings to think of: Beer ( I like funkier saisons with it and it could be cool to try the beer the Willoughby is washed in if you can), Sparkling rose, funky Ciders (Spanish style would be good), an off-dry Riesling. Also grab some honey while you are eating this bad boy!
