A recent phone call (about the logistics of shipping cheese) with Pat Ford, one of the owners of Utah’s Beehive Cheese, led to a collaboration between Beehive and Southern Origin Meadery. He mentioned in our conversation that he would like to infuse mead into his Promontory Cheddar – a perfect pairing concept of “honey wine” with cheese handcrafted in the Beehive State. I introduced him to Brianna, one of SOM’s owners and ta da… Mead Cheeses.

Brianna sent a selection of Meads and honeys to Pat who used his magic to craft three cheeses: Wildflower, Legacy Red and Pollinator Pyment.
I had the pleasure, along with The Man, to sample and taste all three last week and after The Man swooned, we discussed each edition and pronounced them all winners. We had a favorite, but you can decide for yourself which you like best.
These Southern Origin/Blue Haven Bee/Beehive Cheese proprietary cheeses will debut this Saturday, the 23rd in the November Subscription Boxes and then will be released to the public on Tuesday, December the 3rd at Blue Haven Bee. You will be able to taste all three on my signature $10 cheese plates on Saturday, December 14th from 1 to 5pm that day. Wedges will also be available for purchase that day!!
Now to the three Mead Cheeses:
The Man and I tasted the Wildflower Mead Cheese first. The floral notes of the Mead enhanced the creamy sweetness of the Promontory.
Next up was Legacy Red Mead Cheese blends its spiciness with the sweet notes of the cheese to create a toothsome delight.
The last tasting was Pollinator Pyment Cheese which created a complexity that delivered floral and tart notes.
Trivia: Pyment is a combination of grape wine and honey mead. (It can also be a combination of mead and water with spices added.)
Were our dear Spaulding Gray still with us, he would award all three cheeses with “four paws”… cause that’s all he had…
