Disclaimer: Sartori has a special place in my heart. I have visited Sartori twice in Plymouth, Wisconsin (courtesy the Wisconsin Milk Marketing Board – now known as the Dairy Farmers of Wisconsin) and once to “make” cheese once at their Antigo Plant in Upstate Wisconsin. The good folks at Sartori have always been generous to me with their support of my cheese journey and my charitable endeavors. When I had the opportunity to install my new Grab n Go refrigerators at Blue Haven Bee and Sweet Combs of Honey, I knew Sartori cheeses would be included.
Price point is always a consideration without sacrificing quality. When
choosing a Parmesan cheese, Sartori’s Sarvecchio was my first choice. The price point works but above all else, Sarvecchio is the most Award-Winning Parmesan cheese made in the United States. Which means you’re getting major bang for your buck!!!
Spaulding Gray first reviewed Sarvecchio in 2010 after forgiving me for not taking him on my Cheese Junket to Wisconsin (as mentioned above). He and The Man often kvetched about me having all the fun, leaving them home to do the heavy lifting… I never figured out what the heavy lifting they were supposedly doing was… in that review, In his review, SG mentioned “those crunchy crystals” that drove him and The Man wild. Those crystals are amino acid called tyrosine. For a detailed tutorial about the crystals that appear in and on cheese, take a moment to read this article written by Pat Polowsky ACS CCP. In his review Spaulding gave Sarvecchio 4 Paws out of 4 Paws (cause that’s all he had).
Sarvecchio tastes of roasted almonds with a hint of caramel. It is aged 20 months and while crumbly, it melts smoothly on your palate. You can enjoy this Parmesan as a table or snacking cheese. You can also use it for your favorite pasta dish, grated on pizza and probably about a million other entrees and appetizers.
And the price point is perfect.
