My first cheese kiosk featured Parrano and it was love at first bite… I have previously written about Parrano on at least three occasions including a recipe using it for making Alfredo Sauce. As much as I love Parmigiano Reggiano, Parrano adds a richer complexity to this iconic Italian pasta sauce. Try it… you’ll love it!!!
Parrano is not readily available here in our little neck of NE Georgia. I brought it into my cheese shop at Sweet Combs of Honey and it has been a hit!!! People love the mild, sweet nuttiness of the cheese… it’s approachable for anyone and to use Liz Thorpe’s term – it’s a “gateway” into specialty cheeses.
I brought a piece home and decided to make a Parrano dinner. I had fresh asparagus ( my favorite vegetable) and Prince Edward Island White Potatoes which I bought to try my hand at Pommes Aligot. I decided Aligot was too much work for the evening and baked them to make potato skins. I also knew The Man would prefer potato skins to Aligot. But soon…
I fried up some bacon, the reason The Man would prefer potato skins and picked some green onions from my garden. After baking, I scooped the flesh out of the potatoes, added the bacon and topped with Parrano.
I wrapped Daniele Prosciutto (you can find it in my cheese shop) around the asparagus and topped with shredded Parrano.
I broiled both dishes to melt the Parrano and served with sliced green onions and sour cream… The Man swooned… and I fell in love with Parrano… once again…
